Pisto or Pistùm is a coarse mince of pork loin, chuck and garlic-flavoured pancetta. It can generally be found in the butcher's and delis along the Mantuan Rice and Risotto Route, a gastronomic tour of the area that starts in Mantua and explores the left bank of the Mincio. It is the key ingredient of the famous Risotto alla Pilota that gets its name from the piloti, that is, the workers who were in charge of husking grains. The husked rice is dressed with pisto. Another way of eating it is risotto al puntel, where the rice alla pilota is served with a steaming chop or ribs.
