Sugolo is a sort of sweet/sour pudding prepared during the autumn harvest, as the first tasting of the must. The recipe's origins lie way back and although it originated more in the peasant tradition, it is now a seasonal dish found in the best local restaurants.
Ingredients for 6 portions
250ml must
sugar, for serving
25g flour
Method
Carefully dissolve the flour into the must. If the must is not sweet enough, sugar can be added as needed. Boil for a few minutes. Pour into dishes (ideally the traditional ceramic bowls). Once cooked, allow to cool before tasting.
