The Garda Colli Mantovani DOC wine comes from the best vines grown in the morainic hills, often on gravely soil. White, rosé and red versions are produced. The following grapes are used: Trebbiano Nostrano, Trebbiano Giallo, Trebbiano Toscano, Garganega for the whites and Rondinella, Merlot and Rossanella for the reds. The different types of production also entail different production processes. The reds are made using a traditional process: grapes are squashed, fermented and macerated with the marc. Subsequently, the marc is separated from the must and left to age naturally. The resulting wine is stabilised and bottled. 

Red wines (traditional method): Merlot: red Merlot grapes, aged in barriques. Cabernet: Cabernet Sauvignon and Cabernet franc grapes, aged in oak casks. Rosso Rubino: Cabernet-Merlot-Rondinella grapes, cherry red with a tendency to get lighter with age; winey, harmonious nose, with bitter nuances. Chiaretto: Rondinella-Merlot-Cabernet-San Giovese grapes, pink, delicate, fruity, with touches of citrus and almonds, dry. 

The production method for the whites is different, more delicate and potentially exposed to dangerous microbial alterations and fermentations. In this case, it is essential that fermentation is done with the skins removed as they might alter the colour of the wine. 

The label ‘Garda Colli Mantovani’ DOC covers different varieties: white, red, rosé. The following wines fall under the label: Chardonnay from Chardonnay grapes, Sauvignon from Sauvignon grapes, Pinot Bianco (hay yellow) and Pinot Grigio (yellow to copper hues).
